French toast with blueberry sauce

Parlez-vous French toast? We sure do! That’s blueberry French toast to you! Try this recipe with our frozen organic or pesticide-free blueberries!

Serves: 3 slices of french toast

Ingredients

FOR THE BLUEBERRY SAUCE
4 cups of Nature’s Touch frozen Organic or Pesticide-free Wild Blueberries
1/2 cup maple syrup
2 tbsp lemon juice

FOR THE FRENCH TOAST
6 slices of multi-grain bread with nuts
1 cup milk (1% m.f.)
1/2 tsp vanilla extract
4 eggs

FOR THE TOPPING
2 tbsp cream cheese

Preparation

FOR THE BLUEBERRY SAUCE

  1. Combine all of the ingredients into a saucepan and bring to a boil.
  2. Lower the heat and simmer for 10 minutes.

FOR THE FRENCH TOAST

  1. Mix the milk, eggs and vanilla extract into a bowl.
  2. Dip the slices of bread into the mixture and cook in a hot frying pan until golden brown.
  3. Pour half of the blueberry sauce over the French toast and add the cream cheese as a topping.

 

To create a French toast version especially for kids, alternate pieces of French toast on a skewer with banana slices and pour the rest of the blueberry sauce over the brochettes.
