Mango-Pineapple Squares

It’s never been so sweet to be so square! Delicious and tropical are meeting at the corner of Mangos and Pineapples! Enjoy this fun sweet favorite!

Ingredients

 

FOR THE MUFFIN MIX

1 cup of Nature’s Touch Frozen Organic or Tested for Pesticide Residue Mangos
2 cups flour
1/3 cup oat flakes
1/3 cup shaved coconut (or unsweetened grated coconut)
2 tbsp baking powder
1 tsp salt
1 tsp baking soda
1/2 cup brown sugar
1 egg
1 cup milk
1/4 cup plain Greek yogurt
1/4 cup maple syrup

FOR THE PINEAPPLE WHIPPED CREAM

1 cup whipping cream
1 cup diced pineapple, with the juice

FOR THE GARNISH

1/2 cup of Nature’s Touch Frozen Organic or Tested for Pesticide Residue Mangos thawed and pureed
Shaved coconut (or unsweetened grated coconut) to taste

Preparation

  1. Preheat oven to 350˚ F (180˚ C). Add pineapple with juice and maple syrup to a very hot frying pan.
  2. Reduce mixture by half and set aside.
  3. In the mixer, blend the whipped cream with 3 tbsp of brown sugar. Allow to rest in the refrigerator while preparing the other ingredients.
  4. Heat the frozen mango in a saucepan until it is very juicy – almost jam-like.
  5. In the mixer, blend the flour, oat flakes, baking powder, salt and baking soda.
  6. Once the mixture is well blended, add the egg, milk and yogurt. Keep half of this mixture aside.
  7. In a large Pyrex baking dish of (23 x 33 cm – 9 x 13 in.), spread the muffin mix to completely cover the bottom.
  8. Bake at 350˚ F (180˚ C) for at least 10 minutes, or until golden brown.
  9. Add layers of the pureed mangoes and top with half of the whipped cream (keep the other half for the muffins).
  10. Let it rest in the refrigerator for at least 30 minutes, and garnish with shaved coconut, granola or tropical fruits (pineapple, orange slices, etc.).
Make muffins for the kids by using the muffin mix that was set aside. Add the rest of the mango puree to the mix and stir gently. Divide the mix into the muffin tins with baking cups and bake for about 20 minutes. Allow to cool. Use a blender to lightly mix the pineapples and add to the rest of the whipped cream. Use this mixture to decorate the muffins!
