Wild Blueberry Dipping Sauce

This slightly sweet and savory dipping sauce is the perfect accompaniment to seafood, including scallops, shrimp or salmon or chicken. Serve it as a dipping sauce (as in this case) or drizzle it atop your favorite protein.

Time: 15 minutes

Serves: 5

Ingredients

Preparation

  1. Heat 1 Tablespoon extra virgin olive oil over medium-high heat in a sauté pan.
  2. Add diced shallot and sauté for 2-3 minutes.
  3. Add frozen wild blueberries, rosemary, vinegar and additional tablespoon extra virgin olive oil.
  4. Cook over medium heat for 5 minutes.
  5. Remove from heat and let cool slightly.
  6. Add blueberry mixture to a food processor or blender and blend until smooth.
  7. Add salt and pepper to taste. 
  8. Serve as a dipping sauce or drizzle sauce over top your favourite protein.
