Avocado Kale Salad with Raspberry Dressing

This simple and delicious raspberry vinaigrette recipe adds vibrancy and freshness to this creamy, rich salad.



  • 4 cups fresh kale or other leafy greens (lettuce, spinach, etc.)
  • 1 ripe avocado, sliced
  • 1/2 cup fresh or frozen mixed berries

Raspberry Dressing


  1. Place kale, avocado and berries in a medium sized bowl.

  2. Put all dressing ingredients into a blender and pulse until well blended and a liquid consistency has been reached.

  3. Add raspberry dressing to salad, toss well and serve.
