Fruity Pudding Cake

  1. Preheat over to 350° F (180° C)
  2. In a large saucepan, combine 1/2 cup sugar and cornstarch. Add frozen fruit and toss well. Bring to a boil, and stir until the fruits have softened.
  3. Divide fruit mixture into 6 small 1-cup jars or ramekins. In a separate bowl, combine flour, baking powder and salt.
  4. In another bowl, cream butter and remaining sugar with an electric mixer. Add egg and vanilla. Mix and stir in dry ingredients alternately with milk.
  5. Spoon the mixture equally into the jars. Bake for 40-45 minutes. Cool and serve.
