Avocado Basil Pasta

A fresh delicious pasta recipe that will surely become and new go-to weekday classic!

Ingredients

 

4 cups Nature’s Touch Frozen Avocados

1 box pasta of your choice

12 cherry tomatoes cut in half

125 ml  chopped fresh basil

1/4 cup toasted pine nuts

Juice of a lime

1/2 cup extra virgin olive oil

Salt and pepper to taste

Parmigiano Reggiano cheese to taste

1 box pasta of your choice

12 cherry tomatoes cut in half

1/2 cup chopped fresh basil

1/4 cup toasted pine nuts

Juice of a lime

1/2 cup extra virgin olive oil

Salt and pepper to taste

Parmigiano Reggiano cheese to taste

Preparation

  1. Place frozen avocados in a large bowl and allow to thaw.
  2. Cook pasta according to package directions. Drain without rinsing.
  3. Pour pasta over avocados, add remaining ingridients and mix well.
  4. Serve immediately.
