Blueberry Swirl Energy Cups

A nourishing on-the-go snack ideal for an active lifestyle. These energy cups made with frozen blueberries are the perfect blend of fruits and oats!

Ingredients

Energy Cups:

  • 1 cup rolled oats
  • ½ cup wheat flour
  • ½ cup pecans, chopped
  • 1 tsp baking powder
  • 2 ripe bananas
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup Nature's Touch Organic Wild Blueberries
  • 1 tsp granulated sugar

 

Crunchy Topping:

  • ¼ cup rolled oats
  • 1 tbsp granulated sugar
  • 1 tbsp brown sugar
  • 1 tbsp vegetable oil

Preparation

  1. Preheat oven to 425°F.
  2. Mix all ingredients for the crunchy topping together in a small bowl and set aside.
  3. Place frozen blueberries in sauce pan with granulated sugar over medium heat. Stir mixture for 5 minutes to combine as it heats, smashing some berries to create a thickened sauce. Set aside to cool.
  4. Spray muffin pan generously with non-stick spray and set aside.
  5. Combine rolled oats, wheat flour, pecans and baking powder in large bowl. Add eggs, smashed banana, and vanilla. Stir mixture together. Batter should be just combined and chunky.
  6. Using an ice cream scoop, place overflowing scoop of batter into each muffin cup, dividing evenly. Add a spoonful of blueberry mixture over the top of each cup.
  7. Using a chopstick, swirl the blueberry mixture into the cup gently. Do not over mix. Add a sprinkle of the crunchy topping to the top of each cup.
  8. Bake for 5 minutes at 425°F. Reduce temperature to 375°F and bake for an additional 12-15 minutes.
  9. Allow cups to cool for at least 10 minutes before serving.
