Broccoli, Red Pepper, and Peanut Sauce

A delicious dish bursting with sweet, salty and spicy flavors! This Thai inspired dish made with frozen broccoli is perfect for the entire family!

Ingredients

  • 2 tbsp natural peanut butter, creamy
  • 2 tsp brown sugar
  • 1 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp canola oil
  • 1 large red bell pepper, sliced
  • 1 ¼ cups Nature’s Touch Frozen organic or Pesticide-Free Broccoli
  • 1 clove garlic, minced
  • 2 tbsp peanuts, unsalted
  • ¼ tsp dried red pepper flakes
  • 1 scallion, chopped (optional)

Preparation

  1. In a medium bowl, mix peanut butter, sugar, soy sauce, and rice vinegar. Set aside.
  2. Heat a large non-stick pan to medium high. Add canola oil and bell pepper and sauté for 2 minutes until a little softened. Add frozen broccoli and garlic and sauté for 7 more minutes until heated through. 
  3. Mix in peanut sauce, peanuts, and red pepper flakes and garnish with chopped scallion (optional).
  4. Serve immediately.

This will reheat well in microwave. Store in refrigerator for up to three days.
