Avocado Basil Pasta

Ingredients

  • 4 cups Nature’s Touch Frozen Avocados
  • 1 box pasta of your choice
  • 12 cherry tomatoes cut in half
  • 1/2 cup  chopped fresh basil
  • 1/4 cup toasted pine nuts
  • Juice of a lime
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste
  • Parmigiano Reggiano cheese to taste
  • 512g Nature’s Touch Frozen Avocados
  • 1 box pasta of your choice
  • 12 cherry tomatoes cut in half
  • 125 mL chopped fresh basil
  • 62.5 mL toasted pine nuts
  • Juice of a lime
  • 125 mL cup extra virgin olive oil
  • Salt and pepper to taste
  • Parmigiano Reggiano cheese to taste

Preparation

  1. Place frozen avocados in a large bowl and allow to thaw.
  2. Cook pasta according to package directions. Drain without rinsing.
  3. Pour pasta over avocados, add remaining ingredients and mix well.
  4. Serve immediately.
