Coco Curry Salad

Preparation time: 15 minutes
Servings: 4 

Ingredients

Dressing ingredients 
- ½ cup of coconut milk 
- 1 tbsp. curry powder 
- 1 garlic clove, finely chopped 
- 2 tbsp. lime juice 
- Pinch of salt

Salad ingredients 
- 2 cups of Nature’s Touch Tested for Pesticide Residue Frozen Mangos, thawed 
- 2 cups of cooked shrimp, cut into pieces 
- 1 cup of cherry tomatoes, halved

Garnish 
- A handful of fresh coriander, chopped 

Dressing ingredients 
- ½ cup of coconut milk 
- 1 tbsp. curry powder 
- 1 garlic clove, finely chopped 
- 2 tbsp. lime juice 
- Pinch of salt

Salad ingredients 
- 2 cups of Nature’s Touch Tested for Pesticide Residue Frozen Mangos, thawed 
- 2 cups of cooked shrimp, cut into pieces 
- 1 cup of cherry tomatoes, halved

Garnish 
- A handful of fresh coriander, chopped 

Preparation

1. Combine all of the dressing ingredients in a bowl. Set aside.
2. Place all of the salad ingredients in a large bowl, add the dressing and mix.
3. Garnish with the chopped coriander and serve!
