Wild Blueberry Bruschetta

In this Wild Blueberry Bruschetta, blueberries are the star. This is a showstopper of an appetizer and is ready in minutes.

Time: 15 minutes

Serves: 5



  1. Toast baguette slices and set aside.
  2. Meanwhile, in a medium saucepan, heat extra virgin olive oil over medium heat and add the frozen wild blueberries.
  3. Sauté for about 5 minutes.
  4. Add 1 teaspoon thyme leaves and continue cooking an additional minute.
  5. Remove blueberries from heat and salt and pepper to taste. Set aside.
  6. Spread each baguette slice with ricotta.
  7. Top with the warm blueberry mixture, remaining thyme and lemon zest.
  8. Serve immediately.
